This limited release from Wyoming Whiskey takes their five-year-old flagship bourbon and finishes it in Pedro Ximenez sherry casks. The bourbon itself has a mash bill of 68% corn, 20% wheat, and 12% malted barley, and the bottling is bottled at 50% abv. On the nose, you get dried and candied fruit, fruit cake, and chocolate. On the palate, you get toffee, dried dates, and vanilla. This is a wonderfully complex and rich bourbon.
