Torre Real (Torres) selects the finest white tuna, Thunnus alalunga, choosing only specimens weighing between 6 and 10 kilograms. They are fished in the Cantabric Sea (Spain) using the age-old and sustainable art of "rod and line" fishing between September and October. This technique of selective fishing (which also avoids unwanted fish being discarded) respects the environment and protects marine reserves. Torre Real preserves are made with fresh fish, not frozen.
