VINEYARDS:
The Pinot Noir grapes that compose this cuvee are sourced from two vineyards: Vauxmuriens and Trois Foulots, both of which consist of a limestone-clay soil- a mixture of rocks and clay on the surface on top of limestone. The vines are grown on an incline and receive southern exposure, experiencing a warm and sunny microclimate. Although not certified, these trellised vines, which average 45 years of age, are farmed with an organic approach.

VINTAGE:
2015 is already showing great quality in both the reds and the whites! Philippe classifies it as a `solar' vintage, referencing the years of 1985 and 2005. It was a dry year that was dominated by sun and heat. After July 22nd the dry spell broke with regular rain and above average warm temperatures. Rainfall was then variable in August depending upon the area of the vineyards. This allowed the vines to ripen in good conditions. With thick skins, the health of the grapes stayed nearly perfect until harvest. The resulting reds are juicy and structured, leaving an impression of a great year with the smoothness of a growing season that was full of sunshine. The ripe tannins are in harmony with anexciting freshness.

VINIFICATION AND MATURATION:
Grapes were handpicked and underwent a strict selection process while still in the vineyards. 100% whole grapes were vinified without the addition of sulphites. Pigeage, which is the French winemaking term for the traditional stomping of the grapes in open fermentation tanks, took place twice a day over the course of three weeks. Alcoholic fermentation was carried out with indigenous yeasts and without artificial thermoregulation. Malolactic fermentation followed in oak casks (1st to 3rd fill). The wine was aged in these casks on its lees (in reduction) without racking for 13 months followed by three months in a stock vat.

TASTING NOTES:
Full bodied and slightly tannic this rich, mineral-driven wine is both spicy and fruity offering prominent notes of redberries and black pepper.

Spicy, with hints of sandalwood and wild herbs, accented by Vegemite, soy and salty flavors. The finish dissolves into sandalwood, spice and saline notes. Best from 2020 through 2030. 265 cases made, 35 cases imported.
