Located on the exceptional hillside of Récy in Savigny, the old Gamay vines are planted on the south side on a noble terroir made up of metamorphic rocks of the blue stone type. Le Cœur des Hommes refers to the women and men who have walked this hillside for decades. Inspired by their work, I pay tribute to them through this single-plot vintage . The grapes were harvested by hand by our wonderful team of harvesters. In the vineyard as in the cellar, Le Cœur des Hommes is produced with respect for life and balance . Wine vinified without additives in stainless steel vats and demi-muids. A small dose of sulfur was used during bottling.
