Dom Pérignon Vintage 2017 is a highly limited, highly structured release due to a challenging, low-yielding growing season. A blend of 61% Chardonnay and 39% Pinot Noir, it features a dosage of 4.5 g/L.
The wine expresses itself through vibration, expansion, foam, and movement, creating a dynamic mouthfeel that is simultaneously creamy, sapid, and saline. Gastronomically, it calls for delicate intensity, freshness, and controlled richness rather than power.
The nose: An immediate expression of duality. Aromas of petrichor, warm yet fresh, followed by jasmine and evening flowers. Notes of candied citrus zest, both vegetal and fruity, soft and grainy.
Palate: Fluid, expansive, and energetic. The wine spreads like foam, filling the mouth with a sensation of movement and swirl. Creamy and sapid, with a vibrant attack and a long, dry finish marked by acidity and salinity. Seductive and rhythmic.
