TASTING NOTES
A vintage which is deeply engrained with a noble character and great distinction. Enjoy with the best quality fish, carpaccio of scallops and vegetable ravioli.

APPEARANCE
The yellow gold hue is adorned with delicate, soft golden glints. It has a subtle effervescence, benefitting from 9 years aged in our chalk cellars.

PALATE
A taut and seductive tactile pleasure (citrus zest, seeded white flesh fruit and Breton biscuits). The wine offers a persistent finish with a structure defined by the quality of its potential as a great vintage.

AROMA
A delicious fruit intensity with elegant lemony citrus notes and nuts (flaked almonds, Menton lemons). There is a long and nuanced sensory development centered around exquisite hints of patisseries (raw butter, Mirabelle plum jelly).

CRITICAL ACCLAIM

WW95, Wilfred Wong of Wine.com

"COMMENTARY: The Billecart-Salmon Sous Bois is one of the best non-vintage Bruts in the marketplace. TASTING NOTES: This Champagne is rich and racy. Its lively aromas and flavors of mineral notes and bright stone fruits should pair superbly with oven-roast chicken over a mix of arugula and kale."

JH95, Australian Wine Companion

"The complex bouquet reflects the primary fermentation in oak casks; the palate no less so thanks to the quality of the premier and grand cru reserves, also matured in oak. But it’s all a question of degree; there’s a core of citrussy acidity underwriting the freshness and length of the wine. 7 years on lees; disgorged December ’20, 7g/l dosage."

WE95, Wine Enthusiast

"Fermented in wood with a touch of spice and toast on the palate, this Champagne is beautifully textured and structured. The Chardonnay gives the wine a steely edge that suggests the bottling could age, so wait to drink this very fine wine from 2023."

JS94, James Suckling

"A dense Champagne with a tight and linear structure. Compressed and very pretty. Hints of nuts and cream with some pie crust. Some nougat, too. Very long and flavorful. It’s one for a meal. One third of pinot meunier, pinot noir and chardonnay. Fermented and aged in barrel for about six months. Disgorged July 19, 2020. It’s aged six years on lees. Drink or hold."

JD94, Jeb Dunnuck

"The NV Champagne Sous Bois Brut pours a medium yellow to deeper straw hue, and the nose is warming and more generous with notes of toast, red fruit of ripe raspberry, spice, and espresso. The palate is rounded, with rich texture though dry, offering notes of orange peel and currant. It has a silky texture and a fairly long finish, with ripe concentration. It is drinking well now and should drink well. Best after 2022."
