TASTING NOTES:
100% Glera from the hills of Cornuda. The vineyard is planted with guyot-trained Cappuccina vines (Double arched cane), and grows on red, deep iron-rich soils. The grapes are soft-pressed with a pneumatic press followed by static racking of the must . Martinotti method (Charmat method) in pressured tank is used at low temperatures with fermentation ranging for 40 to 50 days. Aging in stainless steel for at least 7 months. Residual Sugar is 16 g/l and alcohol is low at 11%. No filtration, nor sulphites added.

"Chalk dust, crushed flowers, sugar-snap peas and dried apricots form the unique yet truly captivating bouquet of the NV Extra Dry Prosecco Superiore. This further intrigues with its ripe burst of fruit on the palate, which is neatly contrasted by a salty flourish and gobs of minerality, yet all is energized by juicy acids. It tapers off clean, leaving a twang of candied lime and hints of wet stone. The Extra dry from Bele Casel is a blend of Glera, Bianchetta, Trevigiana, Perera, Rabbiosa and Marzemina Bianca. This is a polarizing Prosecco, yet I'm finding it quite enjoyable."
