APPELLATION: IGT Toscana
GRAPES: Cabernet Sauvignon, Merlot and Sangiovese
SOIL: Loam, alluvial clay and marl with limestone
ALTITUDE: From 280 to 300 meters a.s.l.
VINEYARDS: From 20 to 8 years old
TRAINING SYSTEM: Spurred Cordon, organic farming
VINTAGE: Very cold winter. Early spring mild but with very little rainfall to then reach the other half of spring and summer with several rain and with average temperatures. Warm September and good rainfall.
HARVEST: Begin to end of September
VINIFICATION: Pre-fermentative maceration for 2 days, fermentation and maceration on the grape skins for about 2 weeks. Alcoholic and malolactic fermentations in stainless steel tanks at controlled temperature. Different varietals vinificated and aged separately.
AGING: Few months in second and third passage barriques and tonneaux.
ALCOHOL: 14,08% in vol.
TASTING NOTES: Lively ruby red colour with intense aromas or red fruits like plums, cherries with raspberry, blackcurrant and green bell pepper and hints of coffee. On the palate is dry with medium alcohol and well-integrated tannins. The aftertaste is long and persistent.
