KABAJ REBULA WHITE 2015

In the late 1980's Katja Kabaj met former French Legionnaire and Bordeaux trained enologist Jean Michel Morel. They married and settled in Katja's family village of Slovrenc. Living in Slovenia also introduced Jean-Michel Rebula to many of the wines of the Caucasus region. White wines produced in this region undergo skin-contact fermentation, similar to the way red wines are created. In the US, white wines like these are commonly referred to as "orange wines".

WINERY NOTES:
Rebula,"the queen of Brda", is our most beloved variety. It produces signewy, long lived wines with tea like complexities. Spontaneous fermentation with 1 month skin contact was followed by a year in French oak. We like serve Rebula with homemade tagliatelle with black olives and olive oil from our own trees.

The wine is crystalline with golden yellow colour . The bouquet is dominated by the vanilla notes and the fruity notes of white peach and grapes. The fruitiness, specially the taste of the grapes persist in the mouth and its minerality is perceived. The finish is long and intense. It's full-bodied, so it's a perfect match for structured dishes, such as white meat and vegetables.
