PHILIPPE PACALET BEAUROY 1ER CRU CHABLIS 2015

VINEYARDS:
Stemming from trellised vines that average 40 years of age, this vineyard is set in limestone clay Kimmeridgian soils that are abundant in pebbles and receive southern exposure. Although not certified, the vineyards are farmed organically.
VINTAGE:
2015 is already showing great quality in both the reds and the whites! Philippe classifies it as a `solar' vintage, referencing the years of 1985 and 2005. It was a dry year that was dominated by sun and heat. After July 22nd the dry spell broke with regular rain and above average warm temperatures. Rainfall was then variable in August depending upon the area of the vineyards. This allowed the vines to ripen in good conditions. With thick skins, the health of the grapes stayed nearly perfect until harvest. The resulting reds are juicy and structured, leaving an impression of a great year with the smoothness of a growing season that was full of sunshine. The ripe tannins are in harmony with an exciting freshness. The whites are rich with interesting balances and nuances and a prominent character.
VINIFICATION AND MATURATION:
Grapes were handpicked and underwent a strict selection process while still in the vineyards. They were then whole bunch pressed without settling or racking. Juice was immediately passed to oak casks (1st to 3rd fill) where alcoholic fermentation with indigenous yeasts and malolactic fermentation occurred. The wine was aged on its lees (in reduction) without racking for 12 months before release.

TASTING NOTES:
This luxurious premier cru Chablis tempts with white flowers, peach and lime fruit aromas segueing to a decadent, well balanced palate with a mineral edge. It presents hints of ripe pineapple, citrus and peach, as well as iodized notes from its soil which is rich in fossil shellfish.
