AmByth Estate is Paso Robles' First Winery to Produce Demeter Certified Biodynamic Wines. We gained our certification from the Demeter Association in 2006. We utilize the Biodynamic method of farming to enhance our observations of nature, and use these intimate insights as tools that allow our 20 acres of vineyards to express their true character through the grapes it produces. We want our grapes to be as unique to AmByth Estate as your thumbprint is to you. The estate consists of 20 acres of vineyards and 600 olive trees dedicated to Biodynamic farming principles since their initial planting. 20 acres of untouched oak forests surround the vineyards.

Each harvest is done by hand with the help of friends and family. All fruit is whole-clustered, and by foot stomping we extract the juices without breaking the stems. All wines go through spontaneous fermentation with native yeasts and also go through malolactic on their own without us introducing any kind of synthetic laboratory- born yeast or bacteria. We do not manipulate this special natural process of grape juice turning into wine but instead oversee the progress over time. The wine is then transferred to clay pots called Amphorae. The Georgians and Romans have been using Amphorae for over two thousand years. We have been using the beautiful Amphora since 2011 and consider their use as being "progressive regressive". They impart next to no flavor and allow the wine to breath in a way that makes a very classical distinctive flavor and texture that we love. No sulfites are ever added to the wine.

Vinification: Hand harvested from estate vineyards over a 3 week period. Separately foot stomped whole cluster in open top fermentation bins and Amphora. Fermented on skins 12- 16 days through primary. The portions were then pressed separately when fermentation near completion and blended together in large stainless. The juice was then divided into a combination of a 500 liter Amphora and one 450 liter and 500 liter Neutral Oak Barrels. Aged for 15 months. Racked during descending moon and then bottled the following descending moon. In bottle 2 years before release.

Tasting Notes: 100% Mourvedre Earth, that's the first reaction after the sip. Longevity, life, evoking intensity overload for the senses. We've always said great things about our Mourvedre, nothing changes with this one.
